Shipra Khanna – Winner of MasterChef India season 2 is one of the globally renowned Indian celebrity chefs. She was honoured as 'Women Chef Taking Taste Beyond Borders' by SAARC and SCWEC in Nepal. She is also a cookbook writer; 'The Spice Route' and 'Sinfully Yours' are famous books which shows her wide culinary experience. 'Sinfully Yours' book won the best cookbook award at 'World Gourmand Awards -2017'.
She hosted various cookery shows like 'Kitchen Stars Ka Safar', 'Flavours Of Ramadan' and 'Pure Sin'. Let's have a look at a few recipes from Shipra Khanna's culinary book shelf on occasion of her birthday (November 17).
Poached Pears Recipe
Sugar – 220 g; Water – 1 litre; Lemon juice – 7 tsp; Pear fruits – 2
Method To Prepare Poached Pears
Boil sugar and lemon juice along with water for 10 minutes.
Meanwhile, peel the skin and scoop out the base of the pear fruits.
Carefully drop them into boiling sugar syrup and let it cook on low flame for 50-60 minutes.
Take it off the flame and serve this easy-to-do pears dessert which will give an amazing feeling that you never forget.
Papaya Glazed Chicken Recipe
Ingredients For Chicken Marination
Chicken breasts – 2 (cut into cubes); Salt – 2tsp; Ginger-garlic paste – 2 tbsp; All spices powder – 1 tbsp; Pepper powder – 1 tsp; Lemon juice – 2 tsp; Coconut milk – ½ cup
Papaya paste for glazing chicken – ¼ cup (grind the raw papaya along with chilli powder, red chilli, salt); Lemon juice – 1 tsp; Oil – As required; Chopped coriander leaves – 1 tbsp
Method To Prepare Papaya-Chicken
Marinate chicken by adding all the 'Chicken Marination' ingredients and set it side. Heat 2 tsp of oil in a pan and saute the papaya paste until raw smell goes off.
Meanwhile, heat some more oil in another pan and cook the chicken until tender. Add some water to the papaya paste and let it cook to get the desired consistency. Take it off the flame and rest it aside.
Heat a grilled pan and transfer the cooking chicken into the heated grilled pan. Smear the prepared papaya paste over both the sides of the chicken and grill them until golden brown.
Finally, garnish with chopped coriander leaves. Toss them well to coat the chicken pieces with coriander leaves.
Take it off the flame and serve the hot chicken-papaya flavour which will give a spicy touch to your taste buds.
Baked Eggs In A Bun Recipe
Ingredients You Need
Buns – 3; Eggs – 3; Salt and chilli flakes to taste; Cheese for garnishing
Method to Prepare Baked Egg Buns
First, scoop out the flesh of the buns from the centre. Break the egg in a bowl and carefully pour the egg in the centre of the bun.
Do the same process for the remaining buns. Sprinkle some salt, chilli flakes and cheese over the bun.
Transfer them into greased baking tray and bake them at 180o C for 5-6 minutes.

Mas Bai Recipe – A Maldivian Fish Rice
Ingredients You Require
Oil – 1 tbsp; Chopped onion – 1 medium sized; Ginger-garlic paste – 1 tbsp; Slitted green chillies – 2; Cardamom powder – 1 tsp; Salt to taste; Pepper powder – 1 tsp; Chilli powder – 1 tsp; Turmeric powder – 1 tsp; Chopped fish pieces – 3-4; Cooked rice – 1 cup; Fried onions – 1 tbsp
Method To Prepare Fish Rice
Saute the chopped onions in heated oil till translucent. Then, goes ginger-garlic paste, green chillies and let it fry until raw smell goes off.
Now add cardamom powder, pepper powder, salt, chilli powder, turmeric powder and give a quick stir to mix them well.
It's time to add fish pieces and roast them well until both the sides turn into golden brown. Pour the cooked rice and let it cook for 5-10 minutes with closed lid.
At last, gently toss it and take them into a bowl.
Ahhh! It's hard to control your palate from tasting this tempting rice with roasted fish.
Almond Soup Recipe
Ingredients You Need
Milk – 1 litre; Pepper powder – ¼ tsp; Finely chopped blanched almonds – 8-10; Salt to taste; Corn flour – 1 tbsp; Water as required; Cream – ¼ cup
Boil the milk along with chopped almonds, salt and pepper powder. Mix corn flour with little amounts of water to get a lump-free batter, then goes cream and give a quick stir.
Now pour the corn flour mixture into boiling milk by stirring continuously without forming lumps. It takes 2-3 minutes to get a thick soup.
Almond flavoured creamy soup is ready to make your day special.
