The chilling environ makes us crave for hot foods. And we definitely vote for hot and yummy soups as they will tickle our taste buds. So, make this weekend special with 'Pumpkin Soup'. But, most of the people don't like to eat foods made with this orange veggie. We bet that one can change their opinion after tasting this scrumptious pumpkin soup which is good for heart health and blood pressure as well. Have a look at the recipe.
1 Kg pumpkin, cut into wedges, deseeded
1 onion, cut into wedges
1 apple, cut into wedges
3 garlic cloves
¼ cup olive oil
1 tsp ground cinnamon
½ tsp nutmeg powder
1.5 litre chicken stock
Salt to tatse

2 tbsp olive oil
1 bunch sage leaves
4 tbsp pumpkin seeds
2 tbsp brown sugar
Method To Prepare Pumpkin Soup
Preheat oven to 180o C. Place pumpkin, onion, apple and garlic into a large roasting pan. Drizzle with olive oil and sprinkle over cinnamon, salt and freshly ground black pepper and nutmeg powder. Toss vegetables to coat well with the spices.
Bake vegetables in oven for 30 minutes.
Remove tray from oven and set aside to cool slightly. Remove skin from pumpkin and squeeze garlic from its skin, then transfer vegetables to a large saucepan.
Add stock to pan and bring to the boil. Reduce heat to simmer and cook until vegetables are tender.
Remove pan from heat, then using a stick blender, puree until smooth, adding more stock if necessary. Alternatively, you can use a blender. For a very smooth soup, strain mixture through a fine sieve.
To serve, heat olive oil in a frying pan over medium-high heat. Add sage leaves, pumpkin seeds cook until crispy, then remove from pan and drain on paper towel. Add sugar and stir until melted and caramel is sticking to pepitas.
Finally, sprinkle with pumpkin seeds mixture over soup.
