Mushrooms, chopped – 500 g
Rice – 2 cups
Vegetable stock – 5 cups
Butter – ½ cup
Medium-sized brown onion, chopped – 1
Garlic, crushed – 1 clove
Freshly grated parmesan cheese – 100 g
Hazelnuts, skin removed – 50 g
Zest of one orange
Bunch of parsley
Salt and black pepper to taste
Olive oil as required
Method To Prepare Mushroom-Cheese Risotto
Saute chopped onions in 2 tbsp of butter and add a tbsp of olive oil until soft. Put the chopped mushrooms and braise them gently over a medium heat to soften slightly and go golden.
Turn up the heat and add rice along with 4 cups of stock and stir through the rice. Pop a lid on the pot and turn down the heat and let it cook on simmer.
After, check the rice consistency and add remaining stock, if needed. Spoon in some butter and parmesan cheese and vigorously stir the rice.
